1. As suggested, adjust your restart settings.
2. Run Windows in a VM, turn off network when not needed, if your programming project does not need outside connection. Host connection OK.
3. App control is your friend. Set it to block in your  firewall (if you have one) to control hours that updates are allowed. I use application control in my ancient firewall.

I am working on some (very ugly) code for Microsoft's O365 (very ugly) Sharepoint. I can't turn off the network, so I turn to my firewall and block Microsoft Updates (among others) except on weekends, saves bandwidth although that is not  critical most of the time.
I see this in the log every few minutes:
Application Control Prevention Alert: APP-UPDATE Microsoft Windows Updates -- HTTP Host windowsupdate.com, SID: 11772, AppID: 2, CatID: 55	10.0.2.237, 50581, X0	x.x.x.x	tcp
Seems to work OK.
