I'm in charge of the product and hence I'm the escalation point for the clients. 24/365 give or take I am contactable and I am payed for it. I don't like to be called when I'm away, but it can happen.

It was not made aware to me at the time of my interviewing / hiring. I guess it is part of my duties, but was not part of my job description.

That's fair enough, in South Africa you don't get sick days for first 3 days or vacation days for first 6months either, and then you only get access to half your yearly vacation until 9months, and after 9months get your full holidays.

...and there's enough bureaucracy between the clients end users and us that an extra day or two between when an issue is reported and when a new version is shipped is just noise.

I totally agree with your sentiments.
However.....I am used to working for small companies where each individual is responsible for quite specialised areas.
In my experience people are smart/considerate enough to violate my down time only in extreme circumstances.

Company generally closes on holidays and they let there customers know about it if needed.
If the company requires us to work during a weekend which is quite rare, a overtime rate is determined.
Whether I want to work overtime otherwise for no pay is up to me.
Whether I'd be willing to be on call, sure.
Whether I am on call, no.

I have always let it be known that I am available if completely necessary. It has never been expected though. And I have only had a work related call once whilst actually away on holiday.
Had quite a few over the years whilst off sick though. They don't seem to mind disturbing you as much for that.
I believe the culture is that if you have a mobile paid for by the company you are expected to answer it if they need you. I do not.

Used to be. But the problem was the only support calls I got were hardly emergencies.
The worst Was when I was on a lads night out, we were all pretty full on beer and curry, and the phone rang. In those days it was analog, no caller ID, so I had to assume it was a customer. Tried desperately to sober up a bit, and sound professional, only to find it was Charlie from the back seat of the taxi...
Now, if a boss gets my mobile number, I change it. It happened once, he was annoyed. When asked if he wanted to pay my bill every month, he shut up and never mentioned it again.
