Basically, anyone in the company can phone you at anytime, if they feel it is warranted.
I got a call one Monday night about 11.30pm, the control system had fallen over on the platform I was working on at the time. I was absolutely $hit faced in the pub. That made for interesting troubleshooting and conversations. Didn't half sober up quickly!
Doesn't happen very often now, fortunately.

Same here--I'm not subject to response time requirement, but when ever there is an emergency they call and I respond.

Wow, I get called to help out with systems I don't even support and to fix problems other people have caused. 
Common sense is admitting there is cause and effect and that you can exert some control over what you understand.

Most of my code is in a finished product so I don’t have to be on call. When I got my Novell Certification back when, I interviewed for a few positions as an admin. Invariably they informed me that I would need to be on call 24 hours. No thanks.
I get crabby when I don’t get enough sleep. That, and at that time, my daughter was born and I did not want to give that part of my life up.
Would I do it now? Heck no! I’ve got it made where I am now. 
It was broke, so I fixed it.

but it has happened. For example during a field trial in USA. I have to come to work and solve their problems on the telephone. If we have field trials in Europe the engineers get to go too, lots of overtime, but if it's somewhere exciting the managers go.
Anyway, if I do have to come in on my holidays, I am very bad bad-tempered and sarcastic and they don't usually call me again. Unless it's really, really bad...

My wife is German too, and whenever they call me from work on my vacation, she's going bad-tempered and sarcastic on my behalf. (which only I suffer from)
Her (correct) opinion is that if they need to call you on your vacation, there's something wrong in the managing.
My personal opinion is that it is an attitude problem.

I'm in charge of the product and hence I'm the escalation point for the clients. 24/365 give or take I am contactable and I am payed for it. I don't like to be called when I'm away, but it can happen.

It was not made aware to me at the time of my interviewing / hiring. I guess it is part of my duties, but was not part of my job description.

That's fair enough, in South Africa you don't get sick days for first 3 days or vacation days for first 6months either, and then you only get access to half your yearly vacation until 9months, and after 9months get your full holidays.

...and there's enough bureaucracy between the clients end users and us that an extra day or two between when an issue is reported and when a new version is shipped is just noise.

I'm available 100% during working hours, and at least 75% beyond.
But when it's holidays, It's HOLIDAYS!

I totally agree with your sentiments.
However.....I am used to working for small companies where each individual is responsible for quite specialised areas.
In my experience people are smart/considerate enough to violate my down time only in extreme circumstances.
