Hi All,
My work laptop out of the blue just re-started, no warning, no nothing. Windows 10 having done an update? Office 365 ill? time of month? It's just so annoying.

My first guess is that it was an important Windows 10 update (hold the snickers, I know  ).
I would check your Windows 10 update log to confirm.
If not, then I would check your system event logs (errors, sys info, etc.).
After that, then I start Googling, TBH.

Yep. Mine too - Kubuntu.
But, annoyingly, work insists that I have a Windows laptop. And, sadly, that is the position many businesses take. Adoption of Linux desktop machines, has nothing to do with it's capabilities. It's simply down to the huge investment that, pretty much, every business, (and public body), has made in the Microsoft stack.

My place still is Win7 for their VM's and desktops (when they supply them). So far, so good.
However - there's good news in that (nearly) everything has been moved to a private network and they all work through their browsers: O/S agnostic !
There are still a few applications out there (and amazingly, one they had me write last week) but it's a utility. Meanwhile, the few applications left are being moved to browsers.
So - it could be eased in with hardly anyone noticing.

Well, maybe you can point out to the legal owners that Microslut's running software on their systems without asking and yet takes no responsibility for what they do with your PC's content, oprability, or security.

I choose my computer by the problems it can solve for me. That is the prime criterion - problem solving ability. Regardless of what kind of engine it uses to do the task.
If my current PC cannot solve a problem of mine, and I have to obtain new tools, the quality of those tools will affect my decision. I am talking about tools as I see them as a user, for solving my problems. Not tools for solving other problems than mine. And again: The engine driving those tools may be whatever.
When buying a new car, I considered electric models. None of them satisfied my needs for transportation. When I (10+ years ago) needed to upgrade my video editing equipment, I considered a Mac, based on its long-lasting reputation as the professional's choice. My investigation showed that it wouldn't satisfy my needs - the old, professional level tools had been replaced by amateur quality. In several rounds, I have investigated (read: Had operating) Linux machines to evaluate them as alternatives to my current tools. They have failed miserably. The engine inside may be OK, but the user level tools simply do not solve any of my problems that my current tools do not solve in better ways.
Maybe Linux is a good engine. But for me, it is not a good car. I prefer a great car, even if there may may be better engines out there.

Could it possibly be because it relates to where you find great user level tools?

Actually, with tech, it's the other way around: If it can happen (to anyone) it'll happen to me.
I break things.
I can't even get my airpods to stay paired these days.

No admittedly I don't own airpods or even a reasonable facsimile, but aren't these those things that make someone look like they've a broken cigarette out of each ear?
If so, just simply keep them stored in your ears and you'll have them properly paired.

Settings -> Update and Security. Change the active hours so it doesn't do it while you are working.

That would imply we are trusted enough to have access to the settings, just tried it & no. We have to 'buy' software licences for a project, it seems the US side won't trust anyone (a case of 'In God we trust, All other cash'?)

I think you are attacking the wrong people. The people who restrict your freedom are most likely your local IT management or DevOps. Those people sometimes have some strange ideas about what is "dangerous" to let plain developers have access to. (Example: My PC clock was not properly set, but those guy down on the ground floor thought it too dangerous to let me synchronize it with the NTP time server!)
If your employer buys IT management services from some external consultant, then that consultant is the target for your criticism. It is not set by neither the OS, the US or anyone that doesn't handle your computer, but those who manage your company's PCs.

With me, I'm pretty sure it's the system that is bust. For instance I have to get permission from my assigned manager to change to my actual manager. All links and documents were sent to an email I can't access for two reasons a) The company I work for split away from a larger (uber company) so everyone used to have an email address @XXYY.com so the split was everyone had two accounts @XX.com & YY.com, now policy changed and new starter were given XX.com only, no one updates the system that I don't have a YY.com address and so it sends the mail there. b) I would go and talk to the manager however they are in a different time zone. Our local IT seem to know whats what though. Oddly obsessed with goat curry...

On the other hand... I can relate to many of the things you tell us

I was under the impression many of my incedents were due to a mix of incompetance mixed with a general dislike for managment, maybe not then. My job isn't too bad (I like it at the moment) Just at times I feel the urge to rage to those who can't get offeneded by it.

I like my job too, but the burocraties we get... they can sometimes...   
Last one: there MUST be only one partition in the laptops.
I could list a lot more... but I prefer not to, just in case.
