the "start screen" is replacing the "start menu" that's true so far. But its not an equivalent for it! You can do so much more with the start menu than with the start screen.
Examples:
You can't group multiple applications together (As with subfolders in the start menu) unless you manually clutter your start screen with all those small applications and arrange them in groups. Especially makes a lot of sense if you just use them say once a month.
The start menu was able to provide links to a lot of applications without getting too messy. Most often you were able to find the application you were searching for by simple following common logic. Sure finding an application on the Windows 8 start screen might be simple... as long as there aren't more than say 20 (made up number) applications on it...
Then again you can search for an application when typing on the start screen... also quite easy but then again you have to KNOW the name of the application you're looking for (how do you remember the name of an applications you don't use on a daily basis?) I e.g. had trouble finding my VPN Client application. as I just couldn't remember the name of it. I knew the name of the vendor but that didn't help when typing in the search box of the start menu as the application name didn't contain the name of the vendor nor the word "vpn". I found it in the start menu because after a quick look at the programs folder of the start menu I found the vendor and so I found the application. Say: How do I find this application in windows 8?
I know this is probaly more an edge case. But those are also always the cases when you don't have time to play around and spend time searching for a certain program.
Additionaly you get the problem of desktop applications vs metro style apps. Let's say you're in the process of writing some documentation and need a programm (a metro app) to get some additional information from (e.g. your default browser). Now hey this application runs as a full screen app. yeah very funny when you quickly want to switch between multiple applications, isn't it?
I wouldn't mind having Windows 8 on a Phone or a Tablet. But using it on a desktop computer for something productive isn't really what I expect of an OS.

Oh... I see the problem. You all just have one computer you do everything on. No wonder everyone has so many problems with Windows.

In mumbly-mumbly years of doing this here computer stuff, I have never once had to do any of the things you mentioned.
Everything I use is either a shortcut on the desktop (kinda like Win8, come to think of it), or (these days) on the task bar a the bottom (which could have easily been shortcuts, anyway).

I've mapped nearly everything I use regularly to hotkeys. I don't use the start menu often but when I do it's when even the Windows 8 start screen can't help me anymore

Last night we had breaded pork with stuffed peppers for dinner. The peppers were a simple Hungarian variety called Alma Paprika and every time I use them I forget - ALMA does indeed mean apple, but in this case it refers to the peppers' small size and shape, and not that it is sweet.
Filia Maximus took a nibble and refused it, Minimus ate half and then called a Scotty0. Mrs Wife was fine with two but wanted no more. The Vilmos was thus left with his two plus another 13/4 to eat. I did. They were good.
Today they are "not so good" going out. Remember guys, Capsicum can burn both ways.
