for the best grilled cheese ever.

It's a spinach and artichoke dip grilled cheese on sourdough, and I am lactose intolerant.

I. Don't. Care. I will take Lactaid and suck it the hell up.

They are delicious. I am making them tomorrow. No matter my lack of appropriate enzymes.

In case anyone would like to make them:

1 bunch of fresh spinach, chopped and stemmed

1 can of quartered artichoke hearts in water (not oil), each cut in half, squeezed of water and drained.

about 3tbsps of minced garlic, to taste

sour cream (1 cup? I don't keep track - it varies a lot)

salt to taste

white shredded cheese to taste (enough to make however many sandwiches you plan to eat per sitting (I user monterrey, mozerrella, parmesan, and/or an "italian blend" - anything white and melty works - shredded parmesan doesn't melt very well but it mixes with other cheese fine in this.

olive oil (1-2tbsps plus enough to spread on the bread)

sliced sourdough


in a large pan heat some olive oil on medium. add the garlic and saute it for a minute, then add the artichoke hearts, and brown them all over medium to medium high heat (i use medium but i cook w/ a pretty powerful gas range and it runs a little hot)

stirring, reduce heat, add the spinach, just long enough to wilt it.

Remove from heat.

Start spooning in sour cream until you get a chunky but spreadable consistency. Set aside.

Brush or otherwise spread olive oil on to the outside facing bread of each side of a potential sandwich (this is where decent spatial reasoning comes in handy when dealing with irregularly shaped sourdough). I use the back of a spoon to do it because I'm lazy and don't want to dig for the brush. Just be careful not to use too much.

Open faced, spread a liberal amount of cheese on one face, and a single layer of cheese on the other. On the conservative face, spread some of that dip stuff you made, and wait until the cheese on the liberal face is melted. Then put it together, cut it in half, and serve.

Repeat until you are taken hostage and forced to make more for people. They are *really* good, so it's a hazard.
