I've got a pretty good idea of what I will install. I just need to make sure I can partition the 2nd NVMe slot into two parts and run linux on one of them in a dual boot config for when the machine is at my desk.

Combination of living on the ground floor of a very busy city street but with easy access in from the side of the building out of view of others (someone broke in), and once being forgetful and leaving it in a cafe.

That's something of a subjective moral position, I'd think. I could make several arguments against that perspective, but I won't right now. Not enough coffee.
Edit: Whoops. It was the last laptop i left in a cafe. The first one I left at someone's house. I never found the one I left at the cafe.

Put a sticker with your cell number on your new laptop. If an honest person finds it, you will get it back.
Put that over permanent marker with your cell number and “reward”. If a dishonest person peels off the sticker, they might go for the reward!

I'll use whatever does the job.  My desktop simply isn't portable enough, even as desktop's go. It's really heavy, and very fragile being all glass, as I said.
I got this laptop because it was the closest thing I could get to my desktop. Sure, my desktop's i5 sleeper chip spanks the mobile i9HX in the laptop in most categories, but really only by about 30%, and with workstation loads, like SQL server, my laptop in theory is better, having more cores.
The big difference is my GPU. Even a laptop 4090 only benches between a 3090 and 3090 TI desktop GPU, but I also run at 4k on the desktop and only 1600p (@ 16:10) on the laptop, so I'm hoping the GPU differences are mitigated quite a bit by the smaller screen/lower resolution.

I mean, a laptop is just that. Its only use is to remote into a real PC.

How does one find themselves the victim of laptop theft on multiple occasions?
Just curious as I have never had my laptop stolen, ever, and I have been working from a laptop for over 10 years now.

Living on the first floor of a busy street in one on north broadway in seattle back when the neighborhood was kinda sketchy. Wouldn't have mattered but anyone could see in my window during the day, and there was hidden access to my side windows off the street, so someone broke in.
The other time it got stolen I left it at someone's place, and came back for it once I realized and it was gone.
Both times I figured out out who did it.

My laptop was stolen once by ... my chef!
He did it while I was working in a factory on location, just to teach me a lesson.
Well, lesson learned I guess

I have friends that have used laptops for decades. Pretty sure right now it is about 20 years for them. One travels extensively all over the world with it.
None of them have ever been stolen.
You can buy hardware that makes it difficult for anyone to walk off with it as long as you remember to lock it up.

Looking at the picture of the ventilation, I would recommend you to make a frame of thin wood or plexiglas that allows you to place the laptop in a stable way, but allows the circulation of the air.
Like 3 cm high where there are holes (in form of rectangle) of 2x5 cm with 1 or 2 cm "wall" separation between them.
