I would not buy a 17'' for work or the taking with me everyday,
but I do have a 17'' as multimedia center in the living room that comes with us, when we go on vacation. I get the laptop and my JBL3 and with that we can still have our films with us and enjoy them with a screen that is comfortable for the eyes even being a bit away.

Well, I assumed work.
For vacation the kids have their own tablets, and I get, vacation. 
I always bring an access point though.

I've been looking at Dell or Lenovo's 'portable workstations' - I suspect similar to 'foldable desktop'

One doesn't develop on a laptop.
Get a desktop. Laptops are expensive for the power they pack in a limited space. Desktops are cheap.
Get a cheap second hand-laptop to remote-desktop into your desktop.
Not joking. A desktop gives you more bang for yer buck. Doesn't require a monitor either, just remote desktop. Get a decent system, not a glorified tab.

Going to have to disagree here. If your screen is 13 or 14" I might agree, but as Marc mentioned above, clear screens, readable code is everything. Besides, I've been using a laptop with high resolution displays for 15+ years successfully.
Please expand on your comment, I'm genuinely interested.
That said, times are changing. I've been trying for a couple of years (just been too busy) to migrate to all virtual machines. So the comment about "desktops" which really should not be called that since mine is sitting next to my desk - ha! Next-tops! is a valid point. I will not argue that you get far more bang for the buck. In fact, that is such an excellent point I might just build another machine for the lab.
One note about the remote desktop approach - this *all* depends on the quality of your network and the security protocols of a particular customer. I have one customer that will only use the POS TeamViewer. Another customer uses a VPN but their network support is less than stellar. YMMV

Laptops usually have a lower processing power than their equivalent desktops. And have gotten very used to having at least two screens (17"). Looking for a way to hook up a third, so I needn't remote desktop into the server anymore. So two PC's on my desk, two keyboards. And a lone 15" monitor that would make you laugh probably

Currently only using it on the home-network, and the machines are hooked to the same router.
..a very old router; maybe time I upgrade that.

Depends how you use it. If it's your primary machine (or a machine you use a lot) and screen size is critical then the biggest screen that you're able to carry.
For me, I've always used 13" but would grab a 14" if it was as small, or smaller, than the footprint of a current Macbook Pro . If I have to use the screen it's either being used as a secondary machine or I'm travelling between offices and 13" gets me through well enough.
However, for working, I always connect to a 27" external.
Everyone has their own answer. Whatever works best for you.

Or is that 4K?
I have a 40" 4K TV as my primary display, and at its native resolution, text is smaller on it than it is on my 27" 1080p monitor. For the equivalent text size (without rescaling), 4K would have to be spread across 54". So presumably you're right at the sweet spot.

I don't see well enough for it to impact me i guess. Either that or this TV is just good about it, or I've gotten so used to it I just don't notice.

high end AMD or Intel processor, starts at 32GB RAM, NVME ssd, 4k 17" 144hz display.... yeah, the specs are nice. What got my attention was the NVidia GPU option and the resolution of the screen... it's a tool, but I was more curious about opinions of the screen size.

That is nice.
While (IMO) bigger is better, no doubt you'll still have to rescale everything, 'cuz with 4K across 17", nothing's gonna be readable at native resolution.

Interestingly, my display, me and my optometrist are having an argument. I'm nearsighted - not badly so - but... I'm in the process of transitioning to progressives... it's ugly.
I've seen people walk up to my laptop and say "how can you see that?". For me, I need crisp text and width of source code. Currently, the laptop I has is 1920x1080 which is okay, but the external screen is 2560x1440. And is amazing at 25" not too big as compared to a 27"...
A 17" is larger than my 15.6 but what kills me is when some laptop maker gives you a 17" at 1024x768. I'll pay for the ultra high resolution and scale up the font size.
