I like gardening, right now its a new house so it is mainly hard landscaping and, to be fair, I am paying someone to do that, but next year it'll be all me. Whatever, its a legitimate past-time and it wasn't on the list.
...and I also like building things, I'd love to do wood carving or build delicate things like guitars like some of the other commentors but I'm no good at that, what I can do is saw and join wood. So I already have a log cabin in my new garden. It will in time become a bar and in passing I'll note it took a fair amount of physical effort to put up. So that's the drinking and fitness covered too.

Always been interested in heritage, and "unloved" heritage in particular - things like fire hydrants, manhole covers and so on. During lockdown and my hour's "allowed" local exercise, I spotted some iron markers with a royal crest and other markings. After some research I identified these as cable joint marker posts, used by the General Post Office (GPO) between about 1895 and 1935. Turns out there is a long run of these through my town, with one only 150 yards from my house. They're on old trunk routes from telegraph and early telephone days.
For some unexplained reason I've become a bit obsessed with these and am compiling a directory of remaining examples; up to 189 now throughout the UK and Eire. If you want to know about them or report a "find" please visit gpo-markers.derektp.co.uk[^]
So now I spend some evenings searching online for images, chasing up the photographers, and using Google Streetview to search likely locations. Maybe a bit sad, but someone has to do it!

I sew, crochet, and color. As a matter of fact, when I was given my Fortran manual, decades ago, I realized that crochet patterns were programs, frequently poorly written, but with loops and subroutines. So I already could program, I just had to learn a new language.
Actually sewing is the same, patterns with tests and goto's.
All of Life is an algorithm which has a stopping condition.

Sure the radio is bluetooth, but that's it for advanced tech. Everything else is mechanically controlled. Vacuum, pressure, cables, levers, gears, all working together without a processor or solenoid in the garage. I've actually made headway on programming projects while covered in grease looking up at the truck.

getting out to nature, gold panning, fishing, wood work, building classic cars/motorcycles, gardening, pickling, fermenting different alcohols, sewing, pottery, airbrushing ... (yes my shop is very full of different equipment)
To balance burn out, I try to do something absolutely not related to the work week. but about once a year I occasionally like to make something embedded and get out the old soldering gun, PCB etcher and c compiler when an idea comes up.
when the work day is done, I try to keep my computer(s) off and cell phone on the side table, I'll still read tech books once in a while, but there are way too many things to experience out there that have no involvement with tech

It started when I wanted to find a box for some electronics and decided they were (a) not quite the right size and (b) not cheap. So I looked into 3D Printing...
I still haven't printed the electronics boxes, but had made loads of add-ons for the 3D printer.
And, of course, it overlaps into coding and electronics!

Well, let's see...currently, I'm crocheting two afghans and taking my first class towards my Masters, and next session (starts end of November), I start taking two classes towards the degree. That's with the hobby coding and reading and TV viewing, too.

Not quite. Masters of Science, Data Analytics. The first class is Statistics. Lots of math. I like math. I'd like a Masters in crochet...that would be interesting. One of the afghans is a patchwork of different stitches you can do in crochet, so that will be interesting when it is done. The other one is for my adult son's Queen-size bed, so it is HUGE and getting hard to manipulate while working on it. It's down to the last two (large) skeins, so it should be done in time for Christmas, I hope.
