You can host ASP.NET in Apache on Windows (try some guys called Covalent *). It does not seem simpler than having IIS installed in terms of insallation and maintenance. I don't know how to avoid postback when u enter edit mode, and do the editing in local, and once you make changes, do the commit. for example I should be able to edit multiple rows without doing a postback, then I want to click a button that should do the postback to make changes. To get around this you either need to use something else, or provide functionality to handle the edit button click on the client side including replacing controls with editable controls, ie. textbox, etc. Handle the postback and use the datagrid, its easier.
