OK, look, from the start I've liked the iPod. and I had an iPhone. But, never liked the whole "locked into the ecosystem" thing. So, had an iPod for my music, aw decent PC for my work, job done.
Recently, it really is like all pretense of being usable has left Apple. To the point where it's stupid. I just updated to the new version of iTunes. How do I load music onto my iPod? F*** knows. There's no option. Anywhere. I got a new iPod cos the old one died, I got a new iTunes, where the elephant is the old (already annoying) option? No. I have to go trawling through the Apple support fora. To find that I have to restart my computer and now I can see the songs but not download them onto my iPod. Despite the fact that I have already deauthorised all other devices. Upon my word, I say; these are dark days. Just, seriously. I might have to buy an mp3 player that isn't an iPod. 
Apple have lost their last reason to exist. At least under Jobs the fashionist-koolaid masses had some kind of grounding. I give it five years.

I still have an iPod classic (the 160GB edition that, unfortunately, they don't produce anymore!), but I've always hated iTunes (and everything else Apple for that matter). I've ranted about the piece of crap that is iTunes before, but I don't think I need to tell you how bad it is. I've met Apple fanboys who disliked iTunes. Just because iTunes is so bad. It's so bad I wouldn't even call it software. Calling it malware would be insulting to malware. Calling it a virus would be insulting to viruses. There really is no word to describe the horror that is iTunes.
Anyway, because I really hate iTunes (I don't think I've mentioned that before) I tried Winamp and it works 
You can put music on your iPod or delete it from your iPod and create playlists. Unfortunately Winamp is no longer, but you can still download the latest (and last) version from their website[^]. Ignore the promises about more coming soon, I've given up all hope 
Being dead and all it's still (lots!) better than iTunes though.

Personally, I use Clementine (though Rhythmbox does syncing equally well), but that's mostly due to me having a Linux desktop, not bitten-fruit or MalSoft (at least where I can help it). I do see they've got a version for Windows and OSX Mountain Lion, perhaps it just "might" be a replacement for iTunes / WMP.
iTunes is one of the reasons I simply refuse to go Apple. But it seems it's not that bad to actually use an iPod/iPhone. My sister was asking to get some of my music files onto her iPhone the other day. My first thought: "Oh hell! Here comes an painful few hours!"
But remembering that Clementine simply worked out the box with my iPod mini and my Samsung Galaxy, I though: Give it a try, what's to loose? It's only "her" phone  Very surprised! Worked like a charm, without any trouble. Plug intop USB, Clementine immediately lists it as a new device, no (annoying) popups, just drag the music / folders / playlists to the device icon and it does the rest.

It looks like the 2 days I spent reworking our Bad Words Filter has been a total waste of time. I'm firing those unit tests.
Maybe it's time we just ditched the notion that swearing is unacceptable. As an Australian it's almost unpatriotic for me to me censoring that stuff anyway...

IMHO gettng music onto an iPod is a PITA from the very beginning. The mere fact that I can't drag music from my computer (or from a friend's computer whom I visit) to my player/phone is enough to annoy me already.

How could a reasonable person come to the idea that to get the floppy disk out of the PC, one should use the mouse, and, on the PC screen, drag and drop the icon of the floppy disk onto the garbage bin?
That was, quite long ago, my first contact with an Apple PC. Surely enough the last one too.

Had an iPod touch, loved it. Didn't care for iTunes ... but the version at that time worked well enough to keep my iPod and my wife's loaded.
At the 2 year mark the iPod touch crapped out. Battery died, as did the speaker. Took it into an Apple store for diagnosis ... $150 to "fix it" ... which means getting a refurb replacement. For a $220 unit.
Ok, it's a brick. It's also the last Apple product I will buy.
I find that my old Samsung Galaxy SIII makes an acceptable MP3 player. Not great, but it works. I haven't found a dedicated MP3 player that I thought was worth the money -- cheap ones are exactly that: cheap -- expensive ones too much $$$ for what they are.
Does anyone have recommendations for MP3 players?

I feel your pain. I have had to deal with my wife's iCrap for years.  Got fed up and bought her a FiiO X5 with 256Gb memory via 2 MicroSDs. Had ripped 300 CDs over time for my music library (lossless) and dumped 4000 songs on the FiiO. Room for 10000 more. No more rotten Apple.

Hmm ... guess I must be in the minority or something because I don't really have a problem with iTunes or the Apple ecosystem. I'm a Windows developer myself but have integrated iPhones and iPads into my system and it all integrates and works fine. Perfect? No, there's a glitch here and there but, in general everything works fine.

Totally feel your pain.
I've never been that crazy about iTunes, but at one point in it's (d)evolution I could at least get it to work somewhat the way I liked it.
They keep screwing with the UI. Ugh!
And with the latest release, why it's enough to gag a dog off a gut wagon!!

Reminds me of some Java code I flow-charted for a client a few years back so they could understand what their system was doing after a few years of patches, a handful of devs, and a bushel of requirement changes.
