I didn't see any option to create an exe file with static libraries

There is option to staticaly link the MFC and CRT with the exe. Ttake Project->Properties->Use of MFC

but I like the ability to create a standard exe where the user doesn't have to install anything

If you put the necessary dll's in the same folder of your binary, you dont have to install anything special. isnt it?

Also, will I be able to install Visual Studio 2008 without it breaking the Visual Studio 6?

Ya. It wont break anything of visual studio 6. I have vs6, vs2005 and vs2008 installed in my machine
