You can test disk mirroring by trashing one of the drives. If they are hot-swapable, just yank one out and put in a new, empty disk. The system will continue to operate during all this, though possibly slower than usual during the rebuild.
RAID-5 with three disks:
Basically, it writes 1 sector to disk 1, 1 sector to disk 2, then checksum of the two sectors to disc 3. The steps are repeated, but the checksum is always written to a different disk. That way, two disks are enough to rebuild the array, it does not matter which disk failed, AND it ofers speed advantages compared to RAID-1.
RAID as such does not offer failover. All disks are in use all the time. However, some RAID-cases have hot-standby-disks, which automatically replace failed ones, in order to keep the window of vulnerability as short as possible.
There also is no real data redundancy: If you accidentally delete something, its lost.
RAIDs only increase uptime and, to a certain amount, throughput.

If I have questions regarding networking and infrastructure, where would I post such questions?
Because of being pestered and pressured into asking "the damned question" (;)), I'll state it explicitly.
I have a w2k3 server with 2 NICs, with addresses: 192.168.1.30 (LAN) & 192.168.1.32 (WAN), now, previously I was using a router which was assigning the rest of the addresses on the network using DHCP and in fact it was the default gateway to connect to the internet. The same server doubles up as a DNS and DC server on 192.168.1.30
Configuring DHCP doesn't seem to be an issue, its setting up ISA server that's proving to be a PITA. Local host can use the internet, but not any of the other computers on the network. Indeed, they can't ping any other computer, even the DNS server. Suggestions on where to start to diagnose and fix this?

For routing to work, they will need to be on different subnets. So the default 255.255.255.0 wont work here. Try 255.255.255.8 (or 7 or 32, or 31, heck I cant remember now!).
