I would like to know which version is good download and practice SharePoint2010 for developer, and some Admin tasks

I wouldn't download the full version just for learning development and admin tasks, download SharePoint Foundation instead:

SharePoint Foundation is a cut down version that doesn't have an 180 day time limit - it's free. I do all of my SharePoint development on a Foundation VM and have no problems deploying WebParts or other features to a full version install.

You mean on virtual machine, I am having server2008 is it ok if I install directly on the machine

Of course, if you have a proper server then it's even better. We're not lucky enough to have our own servers which is why we use VMs :)

Oops I am just saying that I installed windows server 2008 on my laptop, so will it be compatible enough to run the foundation on my laptop

Yes, you'll be fine. If you got the OS onto your laptop, you'll get SharePoint Foundation on there too.
