Then we plan to rent a car and visit castles, loch Ness and Urquhart castle, Dunnotar castle, Eilean Donan Castle with some Skye island, Stirling castle, Drummond castle gardens, Dunrobin castle, some Glencoe...

Is this realistic? is it too much?

Sadly, completely unrealistic. To get from Edingburgh just to Urquart then back would take you all day with zero time to spend there. You have to remember where you are, you will struggle to get over 40mph on these roads and if you get stuck behind people it can be even worse. If you want to visit Loch Ness properly I'd plan to get close and stay overnight then spend time there and head back after. That's two days just for Loch Ness only.
