I would do the same. Unfortunately, my Linux foo isn't quite up to setting up the boxes, explaining the differences to my wife & daughters, showing them how to get things working...

Actually, Gnome3 is fairly intuitive for anyone that uses a smart phone. It fairly effectively accomplishes what Windows 8 attempted to, a shared experience between devices.

Switch to SQL for Linux... Uses much less resources and perfectly compatible...
If IIS is only for internal use, you may consider to move your code to ASP.NET Core and use the Kestrel service it has built in...
You of course can move to Apache or nginx...

Why would you stop there? Why not migrate SQL Server to MySQL or PostgreSQL, and IIS to Apache?
