and seeing as sausages are mostly bread with a bit of miscellaneous parts then what's the issue.

You clearly buy sausages from the "cheap" end of the gene pool.
I prefer mine with recognisable meat in there, and a very low bread proportion (though I add a little breadcrumb when I use them for sausage rolls - helps soak up the fat and keep the pastry crisp, as well as make it a lighter texture).
These are good: The Black Farmer[^] (90% pork, nutritionally 20% fat).
And these are ok: We Are HECK[^] (97% pork, nutritionally 16% fat).
Both are damn good with onion gravy, mashed Mirabel potatoes, and petite pois. Or a sausage sarnie ... I could go a sausage sarnie ...

The sausage roll in the pic looked like the cheapo-frozen sort,
bread of life maybe, but nutritional: not so much.
I prefer my sausages when drunk - no bones to deal with. Sober: proper meat.
