Nope, we gave up Outlook a long time ago when we (the company I work for) switched from Exchange to Google Workspace. We all very happily use the standard Gmail web app.

What type of mail server are you using? This sounds like an IMAP issue where the read/unread flag isn't being updated on the mail server.

It's connected using the connect to gmail feature so I'm not sure. The stock mail client doesn't have this problem.

I use Thunderbird on all devices as MS just pissed me off to the point where I was happy to try a 3rd party product. Sources are GMail and a private hosted imapi account.

Thunderbird here too. I've 12 different email accounts, a mix of POP3 and IMAP. Mainly happy with it, though the calendar is clunky and have never got tasks working. A few other bits are clunky but there have been improvements over the years and it's never done anything really bad.

Hah - retired, 2 accounts, use Google for calendar or the wall mounted paper version and have no use for any of the other ancillary functionality. As an email client it works just fine!

I hate it when people don't answer the question and just suggest an alternative. That said, I'm now going to engage in some self-hatred.
I've used Thunderbird since MS decommissioned Outlook Express eons ago. It works well with my gmail accounts.
I use Outlook at work and I'm... unimpressed. It's slow and a resource hog. Unfortunately I have no choice there, given the level of tactical equipage available to our IT gestapo.

Thunderbird gets my vote. I have used it for many years to handle my multiple email accounts.
Have had very few issues.

No; but I only "open" it when I actually use it; then close it. Being told "You got mail!" got old long ago.
I also don't answer the phone and use a recording machine (if I don't know who you are).

I use it (rarely) for a company account on O365. I have never seen it do that, but I have seen it do worse. Never hooked it to my gmail account but I have a different account and it no longer pulls email for it and won't let me delete it. Typical Microsoft program: "be reasonable, do it my way".
That said, I run Linux and use T'bird with Popfile for most of my email, including that O365 account. Not sure Google and Microsoft want to play nicely together.
Are you using Imap or PoP?

No idea. I just went through the connect account feature that wires up gmail automagically.

I've been running win 11 for a few weeks and still get lost. I'm using Winstep dock so that helps. After figuring out where my shortcuts went.

On my wife's Windows 11 system, it is at the bottom, same as 10. Does anything happen if you tap the "Windows" key?

Yes a search window pops up but no sidebar menu up the left side like win 10 and before

Oh, it's probably because your search index needs to rebuild. You can force it or just wait for Windows to do that automatically.
As to why Windows won't show anything until then... well, Windows ain't what it used to be.

Oh, and the start menu will appear in the center by default. You can move it to the left though.

Right-click on the taskbar and select Properties. It will bring up the new Windows Settings window. Just scroll through all the options and change what you like.
If you use the context menu in Windows Explorer a lot (right-clicking on a file or folder brings this up), then you can change a registry setting to make it appear like the Windows 10 context menu. Google it for details.
Hope that helps.

The task section is now centered, with the start menu being the left icon.

Yeah, the menu sucks. Worse that Windows 10.
You can have a look at Stardock's Start 11 or StartAllBack.
I'm using a combination of these for the taskbar:
ExplorerPatcher
7+ Taskbar Tweaker
