Am I correctly reading this as saying that W11 doesn't currently have a way to disable an "Upload My Private Documents to Microsoft" 'feature'?

In nine categories of work tasks, more workers wanted AI to help than wanted AI to do everything or do nothing. In related news, 70% of this jobs could probably be done by AI

In other words they want someone else to do their job while they get paid for it.
AI has a place to make people more productive, but many people seem to want to kick back and do nothing while getting paid.

Experts predict artificial intelligence will gain sentience within the next 100 years. Some predict it’ll happen sooner. Others say it’ll never happen. Still other experts say it already has happened. I'm assuming it will tell us?

If AI ever gains sentience, then the next logic step is for it to identify to a particular sex and gender...and political party. Equal rights for AI is sure to follow. Voting rights, no doubt.
Where does the madness end?

Leaving aside the red herrings of sex and gender which are totally irrelevant for political rights, if an entity is advanced enough to recognize the Universality of political rights and demand them for itself, who are you to refuse them?

To be fair, it's hard to see AI making worse political decisions than humans.

Microsoft says Windows 7 recovery discs created using the Control Panel Backup and Restore app will fail to start after installing Windows updates released since January 11, 2022. Update works as designed

But don't worry! ALL Windows 7 boxes came with TPM 2.0! Right???

The January 2022 updates were possibly the worst set up updates MS has released in quite a while.

After the .NET May updates, Microsoft will no longer provide servicing updates, including security fixes or technical support, for .NET 5.0. All that code from 2020. Gone. Like tears in rain.
"When .NET 5.0 reaches end of support, applications that use this version will continue to run. That said, we won’t issue security updates for .NET 5.0 starting in May 2022 when we issue security updates for supported versions of .NET, which will be .NET Core 3.1 and .NET 6.0. "

My question is, why is .Net Core 3.1 still being supported if .Net 5.0 is not?

Because .net core 3.1 is a long term support actual production release, .net 5 is a current extended public beta release.
Extended public betas are only intended for people who like upgrading their core platform version every year or so.
Edit: of course since 3.1 is EOL at the end of 2022; anyone on it really should be working on upgrading to .net 6 too.

.NET 5.0 isn't the default version in any version of Windows. Windows 10 defaults to .NET 4.x (x is dependent on the specific version of Windows 10) and Windows 11 defaults to .NET 6.
