If I install Sharepoint on an Server 2010 box does it essentially stop me from hosting other sites on the same box? I ask because I need a VPS with two standard ASP sites AND a Sharepoint site - when I've installed SP in the past I've always used a dedicated VPS for it - as I vaguely recall it needs to take over all of port 80.

Is this correct? Can I host a sharepoint site on the same server as a set of other ASP sites? If so are there any installation considerations I need to think of?

Ideally I'd like the site as www.thesite.org and then put sharepoint at www.thesite.org/sp allowing me to point the subdomain sp.mysite.org at that folder.

Yes when you install SharePoint it will take over port 80, which is necessary for HttpHandlers it needs to process files. You can have other IIS web application hosted on the same machine, just use host headers to route everything as necessary.
