Yes; interfaces were an option; wasn't sure if your design allowed for them. You can make things a bit more succinct:
C#
IWorkbook wb;
...
wb = Activator.CreateInstance( t, new object[] { fs } ) as IWorkbook;
...
_SheetCount = wb.Count;
...
