Try a Sous Vide as well: I use the Anova circulator, and it's brilliant for steak, chicken, and seafood.
They are just releasing a consumer steam / combi oven: Anova Precision Oven | Anova Culinary[^] but it's pretty expensive, so I'm giving it a miss for a couple of years I think.

I don't know how much stuff I could cook with it. We have a small kitchen. It's not much bigger than one of those kitchenettes you find in hotels, but we took some walls out and opened it up some. Still, not much cupboard or counter space so we have to be careful what appliances we get. It's kind of weird having a tiny kitchen but every amenity in it (gas range/oven, nice 1100 watt full size microwave, dishwasher, etc) but aside from the rice cooker and toaster and coffee pot we don't really have room for much.

I know what you mean - our previous house has a kitchen so small that it held a cooker, fridge and washing machine - and only about 1m2 of countertop. Heck, the sink and drainer were bigger than the counters ...
Now we have a larger one, so I get cooker, espresso machine, toaster, knife sets, breadbin, slow cooker, soupmaker(s)*, "external" vacuum sealer, "Chamber" vacuum sealer, meat slicer, and sous vide / deep fryer (I multipurposed the frier) - and still have room to work!
* One of them is brilliant - great for winter lunches! The other is ... overcomplicated.

He's a metalworker (and time travelling lathe owner) but don't let that put you off - he's one of those practical people who know what they are doing with metal, and computerising routers, and ... and who can put together a damn good video to show it. Worth watching, which is rare for YouTube these days - there is far, far too much crap there just for monetisation.

In England we used to have a gas range with an eye-level grill/toaster. We could make English toast (toasted on one side only), cheese on toast was easy - anything on toast was easy. Why don't they do eye-level grills anymore (in America they call them broilers, I think)?

What the USians call "Broiling" is called "Grilling" in the UK.
What the USians call "Grilling" is called "Frying" in the UK.
What the USians call "Frying" is called "Deep Frying" in the UK.
These terms are flexible and are changing in the UK as the pernicious US influence spreads like a virus through the Uk population.
This is why it is called and "Eye-level Grill", not an "Eye-level Broiler".
I believe that they became less popular because they got in the way of modern extraction hoods. I still miss them though. [^]
