Experienced software developers are quite good at estimating small tasks, or estimating small subtasks in a larger task. The issue for a large project is that it's impossible to list all subtasks a priori.

A certain company I used to work for liked launching at conferences. That usually lead to crunch time. I still think it’s generally a bad idea though, as that’s often the code that comes back to bite you first.

Not only software companies do that... Maybe not at conferences but I have had a lot of projects for different customers that had very rigid deadlines and kind of official "events" (SOP's)...
Specially when being abroad, that led to weeks with 80-110 worked hours. Followed with several days off to recover when back at home or getting ill.
Today I would say... screw you. If it is not ready for the deadline, next time don't be so arrogant, hear to our estimations and add a 10% to 15% buffer on top. If you have to book longer trips and pay more travel expenses... your problem.

Notice the comma in that quote? As long as we have commas in sentences (is that something only found in Germanic languages? -- I am woefully ignorant) CSV will live.
