It makes a whole lot of difference believe me. I am an avid reader and reading out of an e-ink reader is just like reading a paper book, except that is lighter, font can be made bigger or smaller and a single reader can hold thousands of books. Batteries last an eternity too, I can get easily 2 weeks out of my outdated (almost 8 years old!) Kobo when I read 16 hours straight per day, otherwise it just lasts longer than I can remember, and it charges extremely fast with an old style charger.
I discovered e-ink when I saw a man on the subway reading a piece of cardboard for 5 minutes straight, before noticing that it was magical cardboard with changing letters. I've been deeply in love with my e-ink reader ever since.
I also read on tablets (Kindle Unlimited is my newest addiction and it doesn't run on Kobo) and the difference in eye relief is staggering. Next e-reader I will bite the bullet and buy a Kindle, if I can't find any alternative Kobo OS with a Kindle Unlimited app.

OK, thanks for your post, it made me realize the difference in technology - I do not know why, but I somehow assumed these readers were only cheap monochrome tablets used only for displaying book pages.

I used to assume that too, until I saw them and found grace. Ok I might be a little too theatrical or a little too obsessed with reading but it has been a life changer for me (and a source of annoyance for my wife).

Power use is the biggest advantage of eink; because it works by pushing pigments around it only draws power when updating. In smaller sizes the main target for color eink would be graphic novels; larger models could replace the banks of large monitors/TVs used as digital signs.
